Courgette fritters with home-made mayonnaise
Lovely and lifted the fragrant nose shows ripe greens, lime zest, blackcurrant, green tea and coriander.
The palate is focused and linear but there is flavour and weight wrapped round the fresh core. The finish is long with a steely mineral line and salivatingly refreshing.
Fermented separately to capture and retain their unique characteristics the wines were then blended just prior to bottling, each adding its own unique quality to the wine. Efficient, reductive handling from vineyard to winery and cool fermentation in stainless steel ensured that all the freshness and flavour of the grapes were retained through to bottling.
