Our 2005 magnum format Pelorus is poised and sophisticated. With almost 10 years spent on its lees, it reveals primary aromatics of pear, exotic spice, subtle white florals and muted earthy notes. Secondary flavours yield toasty characters, stone fruit and grilled hazelnut. The palate is dry with a slightly chalky minerality. It's nervy acidity and persistent bead leads toward a fine, lingering finish.

Background

The Pelorus harvest commenced under sunny skies on the 15th of March, and chardonnay and pinot blocks were harvested steadily according to individual vineyard ripeness. The majority of fruit was hand-picked, while all vineyards were picked at ideal ripeness with the desired flavour and natural sugaracid balance. Eight clones of Pinot Noir and four clones of Chardonnay were used in the 2005 Pelorus Vintage blend. Following harvest, the grapes were pressed without crushing and after a short settling period, the juice was racked into fermentation. A warm primary fermentation in a mixture of stainless steel tanks and large and small format old French oak vessels was followed by spontaneous malolactic fermentation. The base wines were then aged for a further nine months on yeast lees prior to blending in October 2005. The final 60 per cent Pinot Noir and 40 per cent Chardonnay blend was tiraged in December 2005 using prise de mousse yeast and subsequently aged on lees for almost ten years prior to disgorging in late 2014.
