Background

A wine to enjoy on release or to cellar for several years to allow the myriad of flavours to fully integrate. Pinot Noir grapes were destemmed and crushed, then left to cold soak for several days prior to primary fermentation at warm temperatures of around 30C. The juice was 'pumped over' or hand plunged several times a day to maximise flavour and colour extraction from the high-quality single vineyard fruit used in this wine.
