53% Cabernet Sauvignon, 47% Merlot
Roasted beef fillet with sweet potato gratin or wood fired spring lamb.
French oak for six months.
Raspberry, juicy cherry and spice characters with subtle toasty oak.
Bright flavoursome fruit and soft silky tannins.
Parcels of Cabernet Sauvignon and Merlot grapes from selected vineyards were harvest at optimum maturity to maximise varietal fruit flavours and supple tannins. Fruit was fermented and left on skins in static and rotary fermenters for seven days to maximise colour and flavour extraction. After primary fermentation the wines were soft pressed and underwent malolactic fermentation before being aged on French oak for six months before being blended and filtered prior to bottling. The earlier than expected 2016 harvest delivered fruit with excellent varietal characters resulting in wine with an ideal balance of sugar, acid, colour and flavour.
