This is a wine with tremendous cellaring potential. The palate is young right now - tightly structured with potential to open up into an outstanding Cabernet. Rich varietal fruit characters of ripe blackcurrant, cherry and concentrated plums. Well integrated French oak provides depth and complexity, offering even grained tannins and cedar wood nuances. The flavour is long and lingering with a delightful fruit and oak tannin backbone.
With all of the ideal ingredients for the growing of premium fruit it is no wonder that Coonawarra is in a class of its own when it comes to Cabernet. Coonawarra wines will always be among Australia's greatest wines, for their richness, intensity and great depth of flavour. This Ridge Cabernet displays the characteristics that the reputation has been built on, it is ideal to cellar, it has full and rich fruit flavour (as a Coonawarra Cabernet should have) with extended oak maturation imparting greater complexity and structure.
