Nose:
Aromas choco-mint, dark plum and dried spice characters with hint of butterscotch.
Palate:
Intense flavours of plum fruit, dark chocolate and spices. This wine has excellent palate weight and lingering finish with fine tannins.
Background:
A combination of hand and machine harvesting of fruit from individual vineyards were kept separate during fermentation. The majority of the parcels of wine spent 7 days on skins, with fermentation temperatures regulated between 22 and 26 degrees. Pump-overs were completed three times daily to assist with extraction of colour and tannin. The wine was blended and transferred to predominately French oak barrels, a small percentage of new oak (10%) for 12 months to add complexity to both the aroma and palate.
