Foods:
Oak: French oak barrels (65% new) and matured for 10 months
Colour: Deep red with a purple hue.
Nose: Ripe berry fruits with some thyme notes and underlying smoky aromas.
Palate: Silky tannins with rich fruit characters of cherry and plum. Well structured on the palate with excellent length of flavor.

Background:

The 2008 vintage proved a perfect year for growing grapes. It was a warm season that allowed a fantastic fruit set. The fruit intensity was enhanced with minimal wind and rain and the cool nights and warm days that Central Otago is well known for. The fruit was de-stemmed to small open-top fermenters and cold soaked for five days. During fermentation, the cap is plunged by hand up to three times a day. After 23 days on skins, the wine is racked to French oak barrels (65% new) and matured for 10 months Download as PDF
