Both regions experience warm days from northerly winds and cool nights from the Southern Alps, a great combination for the slow day-time build-up of flavours and all-important night-time retention. The drying northerlies also keep the vineyards healthy, meaning less spray and tastier grapes. Riesling was Waipara’s first major success but Daniel Schuster has concentrated for some years on Pinot Noir and the Giesens have perfected a very southern Sauvignon Blanc.
