A beautifully chilled rose is the perfect summer wine for our hot climate, and a brilliant match with many summer foods.
It's made by gently crushing red grapes and leaving the juice in contact with the skins for a few hours. The longer the juice remains in contact with the skins, the more intense the colour. The grapes are then pressed and skins discarded rather than left in contact throughout fermentation as with red wines. The skins contain much of the strongly flavoured tannins - by discarding the skins the taste remains closer to that of a white wine.
